Jeunes Commis Rôtisseurs - 2005

Imagine being confronted with a mystery "market basket" with everything necessary to design and prepare a three-course meal to serve four people using those ingredients-all in four hours time! Such is the challenge given young cooks competing in the Chaîne des Rôtisseurs Jeunes Commis Competition.

At the appointed time, each contestant is given an identical, sealed “market basket" containing all the necessary ingredients for the competition. The contestant must compose and execute a 3-course menu (first course, main course, and dessert) for four people.

Experienced professionals and non-professionals, who are Chaîne members, are selected to serve as judges. A candidate's sponsor may not serve as a judge. To ensure complete secrecy and objectivity, contestants are identified by number only.

Dishes prepared by the contestants are judged on taste, presentation and originality. In addition, scores are given for cleanliness and organization in the kitchen.

The work of each Jeune Commis is presented below. Who would you pick as the winner?

Clearly this was not an easy task. All presentations by the Jeunes Commis were outstanding and our judges considered all aspects, taste, presentation and kitchen skills. Competition judges were: Lyle Viereck, Bailli; Takashi Ito, VC Culinaire; Daniel Rigollet, Bailli Honoraire; Marcel Guichard, VC Culinaire Honoraire; Mme. Joan Dale, Dame de la Chaine, Mme. Elaine Curling, Dame de la Chaine. Facilities provided by Camosun College Cooks Training Program, Interurban Campus, Victoria.
	Bailli Lyle Viereck congratulates Daniel Craig, the winner of the Victoria Jeunes Commis Competition 2005. Daniel is an apprentice chef at the Delta Ocean Point Resort under Chef Rôtisseur Craig Stoneman. Daniel receives a Jeunes Commis Medallion and a Chaîne carving set. He will represent the Victoria Chaîne at the National Commis Competition in Edmonton Alberta this fall.. As sponsoring member the Delta Ocean Point Resort will receive the Chaîne Perpetual Trophy for one year with the name of Daniel Craig and the Delta OPR engraved on the presentation plaque.
