Membership

Membership in the Confrérie de Chaîne des Rôtisseurs is by invitation upon nomination by two current members.   Prospective members are expected to have attended at least two functions as guests of their sponsors and to be familiar with the history and traditions of the Chaîne as presented on this web site.  In all cases you will need sponsors who are members of the Chaîne to recommend you for membership. Application for membership may be made at any time by submitting the appropriate application forms.

Membership requires payment of a one-time initiation fee and the annual dues for the current year. Non-professionals have the rank of Chevalier or Dame de la Chaîne upon initiation. Professional ranks are assigned based upon training and current position. A description of common Chaîne ranks may be found here.

The Victoria bailliage forwards a portion of the dues to the National Headquarters in Montreal for support of national and international events, the Jeunes Commis Rôtisseurs competition and the Chaîne des Rôtisseurs Magazines. The remainder is retained for the local commis competition, culinary scholarships at Camosun College and administration of the Victoria Bailliage. The Victoria Bailliage also has a "Wine Cellar" surcharge of $50 for renewing members and $100 for new members. This goes directly into the cellar budget for the purchase of wines to be used in support of Chaîne dinners at a later date and is included in the local dues. The surcharge is non-refundable and is reviewed at the annual general meeting.
